Example of How to Use

Project-based learning is an engaging way to address critical public health issues in our society in a manner that also serves the needs of the individual.  The number of adults in the U.S. that are overweight or obese is a tremendous public health concern. I use project-based learning to address this concern by teaching adult learners how to read and understand nutrition facts labels found on foods. I provide actual food labels, and students can also bring labels. Learners are divided into groups where they not only evaluate products on calories, saturated fat, sodium etc., but they are also instructed to select a health need based on their personal interests (high blood pressure, diabetes, heart disease, etc.) that they would like to evaluate through label reading.  Critical thinking skills are developed as students evaluate how food is marketed to consumers, what different health claims and health warnings mean and what different packaging words such as "organic" or "eco-friendly" mean.  I have students physically measure out teaspoons of sugar into containers to show how much sugar is in different products that they consume.  At the end of the project, each team must present their findings and conclusions to the class, which helps to develop leadership skills and team cohesion as they prepare for their group presentation.
